Cinnamon Buns

Okay, so these are basically cinnamon muffins rolled in butter and cinnamon sugar. And they are awesome. Maybe not the best thing for weight loss…

Start by sieving together all the dry ingredients, and admire how nice they all in in the sieve.

2014-02-20 17.15.34Okay, as you can see, I used three sugars. I replaced half of the brown sugar with muscovado sugar. But you can always just use brown.

Now, chuck the eggs, oil and milk in a jug.

Beat it until it looks more normal and smooth, and less like something that might explode.

Then add to the dry ingredients, and stir with a wooden spoon…

Spray a non-stick muffin pan with a non-stick spray (as you can see, I don’t want anything to stick). Smear the tin with butter, come on, don’t be shy about it!

Scoop batter into the muffin tins, until they are all almost full. I put two tablespoons in each.

Bake at 200°C / 400°F for 35-45 minutes, until firm and golden

Then comes the fun bit. Turning these ordinary muffins, into something amazing. What can I say, butter has magical powers.

So, melt about 100g-200g butter in the microwave until it’s liquid. Then mix 1/2 cup white sugar and 1/2 cup brown sugar with cinnamon, just taste it until you like it. I’m not sure about these quantities, but if you run out, just mix up some more.

Now, prick a few holes in the side of the muffin with a toothpick. Roll it in the butter, don’t rush it. Give it a good 20-30 seconds. Make sure the whole surface of the muffin is covered butter.

Then take the buttery muffin, and cover it in the cinnamon sugar. Roll it around until no more sugar sticks.

Just a quick tip: EAT ONE HOT! It’s also delish cold, but nothing beats a hot muffin. Okay, the full recipe is below, as normal. Enjoy it.

CINNAMON BUNS

Ingredients
  • 1 1/2 cups (375ml) cake flour
  • 1/2 cup (125ml) white sugar
  • 1/4 cup (62.5ml) brown sugar, or 1/8 cup brown and 1/8 cup muscovado sugar
  • 1/2 tsp salt
  • 2-3 tsp cinnmon
  • 2 tsp baking powder
  •  1 egg
  • 1/2 cup  (62.5ml) oil (not olive)
  • 1/2 cup (62.5ml) milk
  • 100-200g butter
  • Cinnamon sugar
Method

Preheat your oven to 200°C / 400°F. Sift together the flour, white sugar, brown sugar, salt, cinnamon and baking powder in a bowl large enough to hold all the ingredients. Beat the egg, oil and milk until smooth and consistent. Add to the sifted dry ingredients and stir with a wooden spoon, until a smooth wet batter forms. Spray a muffin pan with non-stick spray and grease well with butter. Fill the pan until almost full. Bake for 35-45 minutes in the preheated oven until golden brown.

Melt the butter in the microwave, until liquid. Mix up cinnamon sugar, also place in a bowl. Prick a few holes on the sides of the muffins. Roll the muffin in the butter, making sure to evenly coat the surface. Then, immediately, place in the bowl of cinnamon sugar. Roll and sprinkle until muffin is covered.
